Produced from 100% premium Chardonnay grapes.Hand selected and picked followed by gentle processing and bottling.
Light – medium bodied, fresh citrus flavors.
Crisp acid, Long and complex finish.
A fresh, white varietal with an emphasis on the structure and flavors of Chardonnay from the Golan Heights and northern Galilee. A unique varietal taste with no additional wood flavors or aging. Light to medium bodied with a round, acidic structure. The 2009 harvest was brought forward by two weeks, resulting in higher acidity.
Vineyards:
Merom Golan– Golan Heights – basaltic soil
Safsufa – Upper Galilee – Terra Rossa/basaltic soil
Ben Zimriya – Upper Galilee – Terra Rossa/basaltic soil
Production:
Fermentation for 3 weeks at 12.5 to 13.5 degrees.
After racking – Cold and heat stabilization and filtering at a level of 0.45 microns before bottling.
Total of 3 months in a steel container.
No oak barrel aging.

Pelter, Chardonnay, 2008: As always, unoaked to show off the wine's rich mineral, summer fruits and this year generous of kiwis and peach pits. Medium-bodied, with good balancing acidity. Perhaps not as lively as one expects of an unoaked Chardonnay but showing a generous share of elegance. Drink now-2010. Score 90. (Tasted 19 Jan 2009)
